Easy Dips and Spreads

 Oh, these are better than the dips you buy at the grocery store. Easy to prepare too!

Nacho Dip

1 large sour cream                                                         1  8-ounce package Cheddar cheese, shredded

2 packages taco seasoning

chopped lettuce and tomatoes

Mix sour cream with 1 1/2 package of taco seasoning.  Spread evenly in a 9 x 12 glass pan.  When ready to serve, sprinkle lettuce, tomatoes and cheese on top, then other 1/2 package of taco seasoning.  Serve with nacho chips and salsa on the side.

Salmon Spread

1 pound can (2 cups) red salmon                                    1/4 teaspoon salt

1 8-ounce Philadelphia cream cheese, softened              1/4 teaspoon liquid BBQ smoke (optional)

1 tablespoon lemon juice                                                 1/2 cup chopped pecans, mixed with 3 Tbs. parsley

2 teaspoons grated onion

1 teaspoon prepared horseradish

Drain salmon.  Mix all ingredients but nuts and parsley.  Make 2 balls.  Roll in nuts and parsley.  Serve with crackers.  Can put in freezer for future use.

Shrimp Dip

1  8-ounce cream cheese                                                  1 tablespoon lemon juice

1 can shrimp, shredded                                                     1/4 teaspoon salt

1 teaspoon onion, grated                                                  2 tablespoons mayonnaise

1 hard-cooked egg, chopped fine

Mix well with electric mixer.  To thin, add 2 or 3 tablespoons sour cream.  This can be frozen.
